Brazilian Style Picanha Skewers with Roasted Tomato & Herb Butter
INGREDIENTS:
- Blues Hog Ritas & Fajitas Seasoning
- Blues Hog Rodeo Rub Seasoning
- 1 4 lb. Picanha
- Roasted Tomato & Herb Butter
INSTRUCTIONS:
- Preheat grill to 350℉.
- Cut Brazilian style into steaks across the grain, leaving the fat.
- Season Picanha generously with Ritas & Fajitas and Rodeo Rub on both sides. Let sit for 30 minutes to allow seasonings to marinate.
- Fold strips one at a time into a 'C' shape and place on the skewer, piercing through the middle of each side. Depending on skewer size, about 3 strips on each.
- Place skewers on grill for a quick sear. Flip and repeat on other side, then place over indirect heat for about 10-15 minutes.

Internal temperature should be 120℉. When done, take off heat and let rest for 10-15 minutes. Place Roasted Tomato & Herb Butter generously over each one, allowing to melt.
